Conventional wisdom suggests that salmon grown on sea water has more flavour than salmon grown in fresh water. Certainly more of New Zealand farmed king salmon is grown in cages in salt water. Perhaps it’s the salt, maybe it’s the texture, but chefs seem to prefer it.
